It’s summer concert season! It has been a while since I have shared a recipe. Today I am sharing a simple recipe for a salad that I have been eating since I was a little girl. When I was a kid I would see ambrosia salad at every Tupperware party, shower, or party that I attended.
I really miss seeing this salad as it truly reminds me of my childhood. What I like about the salad is that it’s a way to get lots of great fruit and it can be put together rather quickly. It’s also nice because you can make it the day before you need it. It is also very transportable, making it perfect for trips to the park, beach, or an outdoor summer concert.
Speaking about our concerts, last weekend I finally got to see Bruno Mars in concert. What a fun evening that was!! Bruno and Pharrell performed at the Hollywood Bowl on Saturday. You have never been to the Hollywood Bowl in Los Angeles, let me tell you it’s a beautiful outdoor location and worth visiting for a concert. Pharrell opened up for Bruno Mars and he was amazing.
The reason I mention the concert, is because the Hollywood Bowl has picnic areas so that attendees can picnic at the bowl before the concerts. So that’s my roundabout way to get back to this recipe, because it is perfect for an event like this.
My recipe has no added sugar and I make mine with plain whipping cream, not heavy whipping cream to reduce the sugar content.
1/2 cup whipping cream (I do not use the heavy, just plain)
1 cup green seedless grapes, washed and sliced
1 15.25 oz. can fruit cocktail
1 can (10 or 11 oz) mandarin oranges
3/4 cup mini-marshmallows
1/3 cup shredded coconut (optional)
In a mixing bowl or stand up mixer, beat whipping cream until peaks are stiff. Drain the fruit cocktail and oranges really well. In a separate bowl, mix grapes, fruit cocktail, mandarin oranges and coconut together. My husband does not like coconut, so I do not add it.
Add to whipped cream mixture and chill at least one hour for best results. It is best to cover this salad when chilling to preserve the flavors.
Serve and enjoy.
You can even add a little cream and cherry on top!
You can also add chopped apples, bananas and nuts to this salad, as it is very versatile. Apples and bananas should be added right before serving to prevent browning.
