This easy Marinated Tomato Salad with cherry tomatoes and balsamic vinegar is a wonderful dish to celebrate the season. Cool and refreshing, this easy summer tomato salad is the perfect side dish for picnics, barbecues, and parties.

I made this after trying a similar salad at a restaurant on vacation and it takes me back to that meal every time. Today I am sharing my vacation moment with you through this recipe idea.

This is also a great salad to make when you see fresh cherry tomatoes at the market or maybe even in your own garden. You can use any tomatoes for this recipe, but using different types of cherry tomatoes gives this recipe lots of flavors and colors.

For this recipe, I used red cherry tomatoes, sweet petite golden-orange tomatoes, and green cherry tomatoes. Some of the grocery stores offer a variety pack, which is perfect for this recipe.

Also use fresh herbs when possible.

Hello Friends! Are you just loving the warmer weather lately? We just got back from a week in Puerto Vallarta and the weather was perfect there! We had so many meals al fresco and the produce there was beautiful.

At one of the restaurants we visited, we enjoyed a cherry tomato salad that was deliciously refreshing and tasty. I decided to try to recreate the recipe at home with some juicy tomatoes and just a few simple ingredients.It is a great way to celebrate tomato season.

How to make a cherry tomato salad

I love that I can find fresh tomatoes at the grocery store or farmers market and make a light simple salad for the summer. 

  • cherry tomatoes or grape tomatoes
  • oregano
  • balsamic vinegar
  • sugar
  • extra-virgin olive oil
  • flaky sea salt
  • black pepper

It is also so colorful and simple with a light homemade balsamic dressing to make it really delicious.

Summer Tomato Salad Variations

There are so many possible variations, but a few I love are adding any or all of the following:

  • Red Onions – Add some chopped red onions
  • Cheese – Add some fresh Feta Cheese Crumbles, goat cheese or fresh Mozzarella cheese
  • Fresh Basil – Add chopped fresh basil leaves.
  • Vinegar – You can substitute Red wine vinegar for the Balsamic
  • Tomatoes – You can use large tomatoes, cut in small chunks.

Ingredients
  

  • 2 cups cherry tomatoes assorted looks the most colorful
  • 1/4 cup olive oil
  • 3 Tablespoons balsamic vinegar
  • 2 tablespoons sugar
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • pinch of pepper

Instructions
 

  • Wash tomatoes and drain.
  • Cut tomatoes in half and make dressing.
  • In a medium bowl or mason jar, combine remaining (dressing ingredients).
  • Mix well and add to tomatoes.
  • Keep chilled until serving.

timesaving tips to streamline recipes

To save some time, wash the tomatoes ahead of time and leave on the counter until ready to prepare.

Make the dressing the morning or night before and just add to the tomatoes the day you are planning to serve it.

Another timesaver? Pick up the tomatoes and just use a bottled Balsamic salad dressing. Add a few parsley flakes and you are done.

  1. It is SO fresh. I don’t do well with tomatoes, but I still really appreciate them, if that makes sense.
    I love your timesavers, although there’s nothing like that fresh Balsamic…

  2. I will have a bunch of fresh cherry and grape tomatoes soon. A couple have ripened but I have a lot of green ones growing on the plants. I will definitely try this when I have enough ripe ones from my plants 🙂 This looks delicious and simple! They will all be red instead of multi color, but that is what I have growing.
