Simple Caprese Salad

This Easy Caprese Salad recipe is so easy it is almost too easy to call a recipe! 

This time of year I especially love all the fresh produce and this is the perfect salad to serve this season. It’s made with fresh basil, fresh tomatoes,  some spices, and mozzarella cheese!

I ordered Insalate Caprese a few times when we were in Italy last year and have made it many times since then. It just sounds so pretty in Italian doesn’t it?

Every time I enjoy this salad, it takes me back to the beautiful hills of Italy.

With the rich ripe tomatoes, fresh aromatic basil and creamy mozzarella cheese, it makes for a wonderfully refreshing salad.

I have to admit while I love salads year round, they are especially when it comes to summertime! In order to eat the slow churned ice cream and other cool summer desserts, I have to balance my diet a bit.

What I also love about this easy caprese recipe is that it is only about 4 Weight Watcher points (if you go with regular mozzarella, it is even less if you use part skim)!

This salad is so tasty, fresh and filling and is only a couple of WW points!

The salad originated on the island of Capri and has the colors of the Italian flag! This tasty tomato, basil and mozzarella salad makes a nice appetizer and is a great side addition to sandwiches as well.

The tomatoes should be deep in color and fresh basil and mozzarella cheese is a must for any caprese salad recipe. It can be dressed up with a little balsamic vinaigrette as well, but I like it simple with a little olive oil and basic seasonings.

I just wish I had a fresh basil plant in my garden.

Ingredients
  

  • 3 ripe tomatoes sliced about 1/4″
  • 6 oz. Mozzarella cheese sliced
  • 24 basil leaves washed
  • 1/2 teaspoon oregano
  • olive oil
  • salt
  • pepper

Instructions
 

  • On plate layer basil leaves, and alternating tomato and mozzarella slices.
  • Drizzle with olive oil
  • Season with oregano, salt and pepper and serve.

  1. What’s funny is that I don’t like tomatoes, yet I love fresh mozzarella SO MUCH that caprese salad is my favorite. I wonder if I should ever find an alternative.
    Either way, so fresh and yes, pretty to order in Italian.
