This Slow Cooker Rotel Dip is one of my favorite party recipes to make, and it’s going to quickly become one of yours, too! It is creamy, cheesy, and full of flavor! Made with just 3 ingredients and almost no prep, this slow cooker cheese dip practically makes itself.

I love bringing you easy and delicious recipes and it doesn’t get any simpler or tastier than this Slow Cooker Rotel Cheese Dip. It’s the perfect appetizer for game day, holiday parties, family gatherings, or just weeknight snacking!

This cheesy dip only requires 3 ingredients and the prep time is so minimal, the recipe practically makes itself. And it’s easy to customize to give it a little heat or a sublime, smoky depth. And my favorite part, you can serve this Rotel Dip right in the crockpot, so cleanup is a breeze!

- Ground Beef – cooked before adding to crock pot

How to Make Slow Cooker Rotel Dip

Step 1 – Brown the ground beef and drain.
Step 2 – Add cooked beef, Rotel, and cubed Velveeta to the slow cooker.
Step 3 – Cook on low 2-3 hours or until melted and smooth.

How to Store and Reheat Leftover Dip
Allow the dip to cool completely and store in a wide mouth Mason jar or airtight container. Keep in the refrigerator and use within 5 days.
Reheat in the microwave or on the stovetop.
In the Microwave – place dip in a microwave safe dish and heat on medium power for about 2 minutes. Stir, and heat again on high for 1-1.5 minutes.
Stovetop – I prefer using a double-boiler method to reheat the sauce so it doesn’t scorch on the bottom. Place the dip in a heat safe bowl that fits over a small or medium saucepan of simmering water. Use a rubber spatula to stir the dip until heated through and creamy.

Ingredients
- 32 oz. Velveeta cheese
- 1 lb. ground beef
- 1 10 oz. can of Rotel diced tomatoes & green chiles
Instructions
- In a large skillet, cook and crumble the ground beef until browned.
- Slice the Velveeta cheese and add to your crock pot.
- Add the browned ground beef and the can of Rotel.
- Cook on low for 2 hours, stirring every 30-45 minutes, until dip is melted and hot. Enjoy.
