Substitutions & Alterations

  • Meat: Swap ground beef for spicy sausage, ground turkey, or plant-based crumbles.
  • Cheese: Use a mix of cheddar and cream cheese instead of Velveeta for a less processed option.
  • Rotel substitute: Use canned diced tomatoes + a can of green chilies.
  • Spices: Feel free to play around with the spices used. Onion, garlic powder, and chili powder are great options to start. You can also add a depth of flavor with some smoked paprika or chipotle powder, or spice it up with some cayenne pepper or hot sauce.
  • Add-ins: Try black beans, corn, chopped onion, or diced jalapeños for added texture and flavor.

Time Saving Tips & Tricks

  • Keep the dip in the crock pot on warm during parties to maintain a creamy texture.
  • Stir the dip every 30-45 minutes to prevent burning around the edges.
  • Double the batch for large gatherings – everyone loves it
  • Repurpose leftovers by using as a topping for baked potatoes, nachos, or tacos.
  • If you want a spicier version, use Hot Rotel or add diced jalapeños

How to Serve Rotel Cheese Dip

  • Serve with tortilla chips, pita chips, celery sticks, or mini bell peppers.
  • Pair with other party foods like Buffalo Chicken Dip, Ranch Chicken Sliders, or Mini Taco Cups (Raquel will link later)

How to Store and Reheat Leftover Dip

Allow the dip to cool completely and store in a wide mouth Mason jar or airtight container. Keep in the refrigerator and use within 5 days.

Reheat in the microwave or on the stovetop.

In the Microwave – place dip in a microwave safe dish and heat on medium power for about 2 minutes. Stir, and heat again on high for 1-1.5 minutes.

Stovetop – I prefer using a double-boiler method to reheat the sauce so it doesn’t scorch on the bottom. Place the dip in a heat safe bowl that fits over a small or medium saucepan of simmering water. Use a rubber spatula to stir the dip until heated through and creamy.
