I made this today because it was a warm day and I was looking for a way to use the Captain Morgan Pineapple Rum that I was sent. You see the folks at Captain Morgan are having a Memorial Weekend contest for punch recipes using their new Captain Morgan Rum Flavors – Grapefruit, Pineapple and Coconut. The winner gets to go to the Firefly Music festival in Delaware.
Update – this contest is over, however, this cocktail recipe is one you will want to make again and again. The colorful cocktail is perfect for an al fresco dinner or summer luau party. This recipe can be doubled and made to serve in a punch bowl or festive beverage dispenser.
