We are celebrating the warm spring weather here with a happy hour. I am a big fan of happy hour and love to try new cocktails so it was fun to try the new Captain Morgan’s Grapefruit Rum that the captain sent over the other day. I am always looking for refreshing cocktails to make and this grapefruit lemonade cocktail was just the drink to sip while enjoying the outdoors.
Rum drinks remind me of our trips to the Carribean and the laid back lifestyle that is just so relaxing and inviting. Craft cocktails like this one, take me back to those laid-back moments.
One of my favorite drinks right now is the variety of mules made with ginger beer. With that in mind, I made this drink with the grapefruit rum, some ginger beer and low-calorie juice. The grapefruit rum has a nice light citrus flavor and is so refreshing, it makes a perfect cocktail for spring happy hour or a summer barbecue.
I floated the juice on the top and it just makes a pretty color in the glass like a sunrise.
It is so refreshing! I call it a lemonade because of the light citrus flavor.
