This Rainbow Fruit Platter is a fun and colorful way to present and enjoy a wide variety of fresh fruits. It’s especially nice for holidays and special occasions, birthday parties, showers and St. Patrick’s day, but don’t sell it short as a fruitastic tailgating option! Because seriously, who doesn’t like fruit?

This festive fruit and dip tray is super easy to put together. And since most of the fruits can be sliced and stored in the refrigerator overnight, you can prepare most of it ahead of time and simply arrange the platter just before serving with any of the great options listed below.

This simple recipe can also be scaled up to easily accommodate larger groups and parties. Just figure on about ½ – 1 cup of fruit per person for the tray, and don’t forget to include the amount of fruit you’ll personally snack on while preparing it. For me, that’s quite a bit.

Ingredients to Make a Rainbow Fruit Platter

Use the freshest fruit and ingredients for this rainbow platter. See substitution suggestions in the section below.

  • Fresh strawberries – tops removed and quartered
  • Cantaloupe – chopped small
  • Pineapple – chopped small
  • Green grapes
  • Blueberries
  • Purple grapes
  • Miniature marshmallows – for the “clouds”
  • Rolo candies – for your “pot of gold”
  • Store bought fruit dip – optional. See the How to Serve section below for some homemade fruit dip options.

Substitutions & Alterations

  • You can use a wide variety of fruits for this “fruitcuterie” board. Use cherries or raspberries; mandarin oranges, mango and peaches; kiwi; blackberries, etc. Simply match the color of the fruit to the section of the rainbow.
  • Sub a bowl of fluff or whipped cream for the marshmallows as your “cloud”.
  • You can add some chocolate coins in a pot instead of the Rolos for your pot of gold.

This recipe is so easy to put together. Just chop the needed ingredients and place them on the tray sequentially.

Step 1– Cut and prepare all your fruit. Place your fruit dip in a small bowl in the center-bottom of the tray.

Step 2 – Add the miniature marshmallows and the Rolo candies underneath the fruit dip. The Rolo Candies (the “gold”) should be next to the marshmallows as these represent the two ends of the rainbow.

Next start to layer the fruit according to the colors of the rainbow starting from the bottom up. Start with the purple grapes, then the blueberries.

Time Saving Tips & Tricks

  • Keep cut fruit in an airtight container in the refrigerator to keep it at its freshest.
  • The chosen container should be just large enough to accommodate the fruit with the least amount of air.
  • To keep fruits from browning, you can use a lemon juice/water solution to spritz the cut edges.
  • Avoid leaving cut fruit at room temperature for more than 2 hours in warmer weather. Time is a little shorter for serving outside on hot summer days.

How to Store Sliced Fruit

Keep fruit in an airtight container just large enough to accommodate the fruit with the least amount of air. Store in the coldest parts (read: the back) of the refrigerator to keep the sliced fruit at its freshest.

Ingredients
  

  • 2 cups fresh strawberries tops removed and quartered
  • 1 1/2 cups cantaloupe chopped small
  • 1 1/2 cups pineapple chopped small
  • 1 cup green grapes
  • 1 cup blueberries
  • 1 cup purple grapes
  • 2 cups miniature marshmallows
  • 10.6 oz. bag of wrapped Rolo candies
  • Store bought fruit dip optional

Instructions
 

  • Using a large round serving tray, start by placing your fruit dip in a small bowl in the center, towards the bottom of the tray.
  • Add the miniature marshmallows and the rolo candies underneath the fruit dip.
  • Start layering the fruit, purple grapes, blueberries, green grapes, pineapple, cantaloupe, and then strawberries.
  • Add the fruit in a single layer, and then you can build and add more fruit at the end to fill in the board.
