Substitutions

  • You can substitute plain greek yogurt for half of the light mayonnaise to make the dressing even lighter.
  • You an substitute rice wine vinegar for the cider vinegar.

Variations

This base recipe can easily be modified.

  • Spicy - add a splash of hot sauce to the dressing.
  • Sweet - add a little splash of maple syrup to sweeten it a little.

Equipment

To make the dressing you wil need a large bowl or mason jar with a lid.

I also recommend using a large whisk to blend the dressing.

For a fun serving idea, use a pretty dressing jar.

Storage

The slaw mix and the light mayo dressing can each be made ahead of time, but once you add the dressing to the slaw, it is best eaten within 24 hours or the cabbage will get soggy.

Store the dressing itself in an airtight container in the refrigerator. It is good for 2-3 days.

These ingredients don't stand up well to freezing.
