Use fresh ingredients for the best results in taste and texture.
Butter – softened (salted or unsalted butter is okay)
Granulated white sugar
Brown sugar – light or dark brown sugar can be used
Baking powder and Baking soda – make sure these are fresh and in-date for best rise results
Salt
Pumpkin pie spice – you can use this homemade pumpkin pie spice or store-bought pumpkin spice mix
1 Egg – at room temperature
Pure vanilla extract
Canned pumpkin puree – plain pumpkin puree, not pumpkin pie filling
All-Purpose flour – you can sub a gluten free flour you trust for baking
White chocolate chips

How to Make White Chocolate Chip Pumpkin cookies

Step 1 – Heat oven and in a large bowl, mix softened butter, sugars and vanilla.

Step 2 – Add the pumpkin to the mixed wet ingredients.

Step 3 – Blend dry ingredients (but not the chips) in a separate bowl. Blend gradually into pumpkin mixture. Add 1 cup chocolate chips.

Step 4 – Drop cookie dough balls onto the prepared baking sheet.
Add a few chips to the top of each cookie for presentation.

Step 5 – Bake as directed until golden brown.
Transfer cookies to a wire rack and let cool.

Equipment
- large mixing bowl
- Cookie sheet
- Cookie scoop optional
Ingredients
- 1 cup butter softened salted or unsalted ok
- ¾ cup sugar
- ¼ cup brown sugar packed
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice can use homemade pumpkin pie spice
- 1 egg
- 1 teaspoon vanilla
- 1 cup canned pumpkin puree
- 2 ¼ cups flour
- 1 cup white chocolate chips plus ¼ cup for top of cookies
Instructions
- Preheat the oven to 350 degrees.
- Line baking sheet with parchment paper
- In a bowl, mix together butter, sugars, pumpkin and egg over medium speed with a mixer.
- Add dry ingredients and spices to the butter mixture until blended.
- Fold in white chocolate chips.
- Drop by cookie dough by heaping teaspoons onto lined baking sheet
- Press a few additional chips on the top of cookies.
- Bake for 12-14 minutes until lightly browned.
- Transfer cookies to a wire rack and let cool.
