Ingredients

  • 1 cup butter softened salted or unsalted ok
  • ¾ cup sugar
  • ¼ cup brown sugar packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice can use homemade pumpkin pie spice
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup canned pumpkin puree
  • 2 ¼ cups flour
  • 1 cup white chocolate chips plus ¼ cup for top of cookies

Instructions

  • Preheat the oven to 350 degrees.
  • Line baking sheet with parchment paper
  • In a bowl, mix together butter, sugars, pumpkin and egg over medium speed with a mixer.
  • Add dry ingredients and spices to the butter mixture until blended.
  • Fold in white chocolate chips.
  • Drop by cookie dough by heaping teaspoons onto lined baking sheet
  • Press a few additional chips on the top of cookies.
  • Bake for 12-14 minutes until lightly browned.
  • Transfer cookies to a wire rack and let cool.
