  • Chopped broccoli florets – fresh broccoli is preferred but you can use frozen
  • Pasta – I like to use penne or rotini pasta for this recipe
  • Alfredo sauce – store-bought or homemade sauce can be used
  • Mozzarella cheese – shredded
  • Grated Parmesan cheese 
  • Garlic powder
  • Onion powder
  • Salt and pepper – to taste
  • Bread crumbs (optional) – for a crunchy topping

Substitutions & Alterations

  • You can use a homemade alfredo sauce or a store bought jarred sauce for this recipe. Any creamy sauce, such as vodka sauce or 4 cheese sauce, would also work.
  • Change up the vegetables to include your favorite. I also like this recipe with squash and zucchini. 
  • Use your favorite pasta shape. I find medium pastas work best.

Reheat leftover chicken broccoli Alfredo bake in the oven or in the microwave.

In the Oven – Heat your oven to 350°F.  Place casserole servings in an oven-safe dish and heat for 10-15 minutes until warmed through.

In the Microwave – Place the casserole portion in a microwave safe dish. Heat for 3-4 minutes, stirring once halfway through, and heat again for another minute or until heated through.

Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 cups broccoli florets fresh broccoli is preferred but you can use frozen
  • 12 oz pasta penne or rotini
  • 2 cups Alfredo sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup bread crumbs optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Cook the pasta according to package instructions. Drain and set aside.
  • Blanch the broccoli (if using fresh) by boiling it for 2-3 minutes, then draining. If using frozen, thaw it first.
  • In a large bowl, mix the cooked pasta, chicken, broccoli, Alfredo sauce, garlic powder, onion powder, salt, and pepper until everything is well combined.
  • Transfer the mixture to the prepared baking dish. Sprinkle the mozzarella, bread crumbs and Parmesan cheese evenly over the top.
  • Bake for 25-30 minutes until the cheese is melted and bubbly, and the casserole is heated through.
  • Remove from the oven and let it rest for 5 minutes before serving.
