Substitutions & Variations

Cookie Crust. You can use graham cracker crumbs or chocolate cookie crumbs in place of the ginger snap crust. Make with crushed Oreos or crushed chocolate thins.

Pumpkin Spice. If you don’t have Pumpkin Pie Spice, you can add 1/2 teaspoon each of nutmeg, allspice and ginger.

Cream Topping. You can use thawed whipped topping or even canned whipped cream in place of the fresh whipped cream

Parfait Toppings. You can top the parfaits with chocolate chips, chopped walnuts (or other nuts) or a sprinkle of cinnamon in place of the pecans.

Max It. Instead of mini dessert parfaits, you can make a large pumpkin trifle in a medium trifle dish.

Storage

Store leftovers in an airtight container in the refrigerator.

Timesaving Tips

  • This is a great recipe to make ahead but only prepare the layers a day ahead and store separately. Then prepare layers the day you plan to serve.
  • Note that this recipe calls for pure pumpkin puree, not pumpkin pie filling which has sugar and spices added.
  • For best results use room temperature ingredients.
  • I like to use a piping bag for the whipped cream layer so that it is easier to add to the parfaits.
  • Store leftovers in an airtight container in the refrigerator.
