Pumpkin Layered Dessert Parfaits

These Pumpkin layered dessert parfaits are a smaller and fun version of this Pumpkin Lush Dessert.
Pumpkin, gingersnaps and whipped cream come together in a tasty no bake dessert that is easy to make and a delicious treat. These single serving parfaits are the perfect fall dessert for Thanksgiving dinner or a fall tea party.

This no bake pumpkin dessert is a great way to celebrate pumpkin season. It is full of pumpkin flavor and is one of our easy dessert recipes for fall.

Equipment
- large bowl
- hand mixer or stand mixer
- parfait cups or small mason jar
How to Make Layered Pumpkin Parfaits
Step 1- Make Gingersnap Crust
Using a food processor, crush the gingersnaps. Set the crumbs aside.

Step 2 – Make the Whipped Cream Layer
In a large bowl, or bowl of a stand mixture, beat the heavy cream until peaks form. Add the sugar and marshmallow cream. Set aside.

Step 3 – Make Creamy Pumpkin Layer
Mix canned pumpkin, pumpkin spice, cream cheese and sugar until fully blended. Set this pumpkin cream cheese mixture aside.

Step 4 – Layer the Dessert
In each mason jar or parfait cup, Add 1 tablespoon of cookie crumbs.

Step 5 – Add the Pumpkin Cream Cheese Layer
Add a tablespoon of pumpkin mixture to the cups.

Step 6 – Add Whipped Cream Layer
Using a piping bag and tip, add a layer of whipped cream.

Step 7 – Repeat the Parfait Layers
Add another layer of cookies, pumpkin mixture and then whipped cream mixture. Top the cream layer with a few chopped pecans and serve.

Substitutions & Variations
Cookie Crust. You can use graham cracker crumbs or chocolate cookie crumbs in place of the ginger snap crust. Make with crushed Oreos or crushed chocolate thins.
Pumpkin Spice. If you don’t have Pumpkin Pie Spice, you can add 1/2 teaspoon each of nutmeg, allspice and ginger.
Cream Topping. You can use thawed whipped topping or even canned whipped cream in place of the fresh whipped cream
Parfait Toppings. You can top the parfaits with chocolate chips, chopped walnuts (or other nuts) or a sprinkle of cinnamon in place of the pecans.
Max It. Instead of mini dessert parfaits, you can make a large pumpkin trifle in a medium trifle dish.
Storage
Store leftovers in an airtight container in the refrigerator.
Timesaving Tips
- This is a great recipe to make ahead but only prepare the layers a day ahead and store separately. Then prepare layers the day you plan to serve.
- Note that this recipe calls for pure pumpkin puree, not pumpkin pie filling which has sugar and spices added.
- For best results use room temperature ingredients.
- I like to use a piping bag for the whipped cream layer so that it is easier to add to the parfaits.
- Store leftovers in an airtight container in the refrigerator.

Equipment

Ingredients
Cream Layer
- 2 cups heavy cream
- 1 cup powdered sugar
- 3/4 cup marshmallow cream
Pumpkin Layer
- 2 cups pumpkin puree
- 6 oz reduced fat cream cheese
- 1/2 teaspoon pumpkin pie spice
- 1 cup powdered sugar
Crumble Layer and topping
- 20 gingersnap cookies
- 3 tablespoons pecans, chopped
Instructions
Prepare the Layers
- Crush cookies in a food processor or baggie using a rolling pin.
- In a large mixing bowl or bowl of a stand mixer, beat cream on medium until stiff peaks form. Add powdered sugar and marshmallow cream . Set Aside
- In a separate medium bowl, mix pumpkin puree, cream cheese, pumpkin pie spice and cream cheese. Mix on medium until completely blended.
Assemble the Layered Dessert
- In each parfait cup, add about 1 tablespoon of cookie crumbs.
- Add a large spoonful of pumpkin cream cheese mixture to each parfait.
- Add a layer of whipped cream to each parfait. Repeat these three layers once more in each parfait cup.
- Top whipped cream layer with a few pecans.
- Chill and serve.
