Pumpkin Layered Dessert Parfaits
Layered pumpkin dessert parfaits are a perfect mini fall dessert. Made with delicious layers of pumpkin spice, whipped cream and gingersnaps.

Cream Layer
- 2 cups heavy cream
- 1 cup powdered sugar
- 3/4 cup marshmallow cream
Pumpkin Layer
- 2 cups pumpkin puree
- 6 oz reduced fat cream cheese
- 1/2 teaspoon pumpkin pie spice
- 1 cup powdered sugar
Crumble Layer and topping
- 20 gingersnap cookies
- 3 tablespoons pecans, chopped
Prepare the Layers
Crush cookies in a food processor or baggie using a rolling pin.
In a large mixing bowl or bowl of a stand mixer, beat cream on medium until stiff peaks form. Add powdered sugar and marshmallow cream . Set Aside
In a separate medium bowl, mix pumpkin puree, cream cheese, pumpkin pie spice and cream cheese. Mix on medium until completely blended.
Assemble the Layered Dessert
In each parfait cup, add about 1 tablespoon of cookie crumbs.
Add a large spoonful of pumpkin cream cheese mixture to each parfait.
Add a layer of whipped cream to each parfait. Repeat these three layers once more in each parfait cup.
Top whipped cream layer with a few pecans.
Chill and serve.
I like to use a piping bag for the whipped cream layer so that it is easier to add to the parfaits.
You can skip the pecans and top with additional gingersnap crumbs.
