Equipment

Ingredients

Cream Layer

  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 3/4 cup marshmallow cream

Pumpkin Layer

  • 2 cups pumpkin puree
  • 6 oz reduced fat cream cheese
  • 1/2 teaspoon pumpkin pie spice
  • 1 cup powdered sugar

Crumble Layer and topping

  • 20 gingersnap cookies
  • 3 tablespoons pecans, chopped

Instructions

Prepare the Layers

  • Crush cookies in a food processor or baggie using a rolling pin.
  • In a large mixing bowl or bowl of a stand mixer, beat cream on medium until stiff peaks form. Add powdered sugar and marshmallow cream . Set Aside
  • In a separate medium bowl, mix pumpkin puree, cream cheese, pumpkin pie spice and cream cheese. Mix on medium until completely blended.

Assemble the Layered Dessert

  • In each parfait cup, add about 1 tablespoon of cookie crumbs.
  • Add a large spoonful of pumpkin cream cheese mixture to each parfait.
  • Add a layer of whipped cream to each parfait. Repeat these three layers once more in each parfait cup.
  • Top whipped cream layer with a few pecans.
  • Chill and serve.

Notes

I like to use a piping bag for the whipped cream layer so that it is easier to add to the parfaits.
You can skip the pecans and top with additional gingersnap crumbs.
