Peaches and Cream Cookies

So it is hard to believe, but today it is time for another Lady Behind the Curtain Challenge!

This month's two ingredients are peaches and cream.

I have to admit, I had trouble deciding what to make. I thought about muffins, pastries, crepes and they all sounded good. I did not decide until the last minute what I would make, which is unusual for me because I am a planner. But given too many choices and I take a little longer to make a decision.

So, after thinking about the different possibilities, I decided to make Peaches and Cream cookies.  Yes, I put the cream inside the cookie! As you may know, all of the participants have to develop their own original recipe. This is mine and I really liked the way they came out.

A wonderfully light cookie - perfect for tea time.

Peaches and Cream Cookies

½ cup butter, softened

2 cups flour

¾ cups granulated sugar

½ cup heavy whipping cream

½ cup powdered sugar

½ teaspoon baking powder

¼ cup peach preserves

powdered sugar for dusting

 

Preheat oven to 350 ° . Line cookie sheet with parchment paper.

In a mixing bowl, cream butter and sugars together. Add whipping cream and mix well. Add flour and baking powder.

Roll dow into teaspoons and make an indent in each one.

Put about ½ teaspoon of peach preserves into each cookie cavity.

Bake 14-16 minutes, until cookies are brown at base.

Let cool and dust with powdered sugar.

Makes 18-24 cookies, depending on size.

I am eating these while watching the Bachelorette finale. The show suddenly got very interesting and surprising towards the end. I am not a faithful watcher,  but got sucked into this one. Did you watch it?
