Kiwi Mango Yogurt Parfait

These Kiwi Mango Yogurt Parfaits are just the thing to bring on the spring weather.  Needless to say, I am feeling the need to eat some fresh fruit today. These yogurt and fruit parfaits also make some great treats during the summer with frozen yogurt.

I made a kiwi mango smoothie the other day and since I had some fresh fruit, it gave me the perfect idea for a breakfast or dessert parfait. Breakfast time is one of our favorite times as we start the day. There is just something about saying good morning to family and talking about what the day will bring that warms the heart, even if we have a busy day ahead.

 

It is such an easy recipe and for other ideas, you can change out the fruit:

  • Strawberry and Blueberry
  • Mango and Kale
  • Strawberry and Banana
  • Blueberry and Kiwi
  • Pineapple and Strawberry

Kiwi Mango Yogurt Parfait

These Kiwi Mango Yogurt Parfaits are full of fresh fruit for an easy breakfast.

Ingredients

  • 1 ⅓ cups low-fat yogurt
  • 3 kiwis
  • 1 mango
  • 1 cup Cinnamon Toast Crunch cereal

Instructions

  • Peel kiwis and mangoes and chop into bite-sized pieces.
  • Place ⅓ cup of fruit into serving up
  • Spoon ⅓ cup yogurt ion top of fruit.
  • Add ¼ cup cereal on top of fruit.
  • Repeat layers of fruit, yogurt and cereal.

    I love the idea of Cinnamon Toast Crunch. It's the only cereal Scarlet's best friend will eat, so we keep it in the house for their numerous sleepovers.
