These cookie cakes are so expensive to buy from a bakery and so inexpensive and easy to make at home. It will take you no time at all and once you've made one your family members will request these over and over again.

A cookie cake is such a fun and different way to celebrate. It is such a nice variation of the classic celebration cake, especially when you have a bunch of celebrations in a row and want something different.

Our cookie cake recipe is a special treat that won't break the bank but will make the recipient feel loved and appreciated. These cakes are easy to customize for any occasion from a baby shower to a retirement party.

How to Make Cookie Cake

Making a homemade cookie cake is so easy you won't ever want to pay for a store-bought version again. It's basically like making any cookie, but all the dough goes into one big pan. Here are the step-by-step instructions

Ingredients for Cookie Cake

Unsalted butter. Softened to room temperature.

Light Brown Sugar. Packed in the measuring cup.

Eggs. The large-size eggs are best.

All-Purpose Flour. This is a staple that should be in every kitchen at all times!

Salt. I call this ordinary table salt or kosher salt. The regular salt like you would use to load a salt shaker.

Baking Powder. I replace mine every six months whether I've used it all or not, just to make sure I have fresh on hand. Stale baking powder can fail in a recipe. To keep track, simply write the date you open the can on the plastic lid with a Sharpie marker.

Cookie Nip Flavoring. This is an emulsion vanilla bean and salted caramel in a sweet buttery blend. It adds high-end bakery-quality flavor to your cookie!

Vanilla Extract. Use real vanilla extract over imitation vanilla whenever possible.

Semi-Sweet Chocolate Chips. We use a mix of chips in this recipe for added dimension to the flavor.

White Chocolate Chips. I love the contrast between these two chips!

Dot Sprinkles. Optional for decoration.

 

Cookie Cake Recipe Equipment Electric mixer Mixing Bowls, cups and spoons Parchment paper Wilton Giant Cookie Pan, Round Ingredients ¾ (1.5 sticks) cup unsalted butter, softened to room temperature 1 ¼ cup packed light brown sugar 2 large eggs (116 g) 2 ¼ cups all-purpose flour ¾ teaspoon salt 1 ½ teaspoons baking powder 1 teaspoon cookie nip 1 teaspoon vanilla extract 1 cup semi sweet chocolate ½ cup white chocolate Instructions Preheat your oven to 350° F. Add butter and brown sugar to a large bowl and cream until light and fluffy. Scrape down the bowl and add eggs and flavoring. Combine flour, salt and baking powder in a bowl and whisk together. Add to dough mix and mix until just combined. Fold in Chocolate chips Spray cookie/Pizza pan Line with parchment paper, optional Spoon into the center of the pan and spread out within an inch of the side. Do not spread to the edge, the cookie needs space to expand. Bake at 350 for 20-22 min or until golden brown. Remove from oven and let cool completely Serve as is or decorate with buttercream.

  3. Scrape down the bowl and add eggs and flavoring.
  4. Combine flour, salt, and baking powder in a bowl and whisk together.

7. Spray cookie/Pizza pan

8. Line with parchment paper, optional

9. Spoon into the center of the pan and spread out within an inch of the side.

Spread to fill the space, but not to the edge so it has some room to expand.

Spread batter to fill the pan evenly.

Bake at 350º for 20-22 min or until golden brown.

Remove from oven and let cool completely.

Serve as is or decorate with buttercream and sprinkles.

Tips for Making Awesome Cookie Cake

Invest in the Wilton Giant Cookie Pan for best results. This is a pan you will use over and over again! If you have to you can make the cookie on a pizza pan but it will spread out more and be less uniform.

Cookie cakes make great teacher gifts for your child's Sunday School teachers, school teachers, coaches, play directors, and anyone you want to treat with something special. It's super easy to customize the cookie with a name or message using a Wilton pre-made icing tube from your local craft store.

Use any kind of chocolate chip, mini chips, chocolate chunks, toffee, butterscotch, or peppermint chips to personalize the flavor of this cookie! Anything you can use as a mix-in for regular chocolate chip cookies can be used in this cookie dough.

Is this cookie cake dairy-free?

You can make this cookie cake recipe dairy-free by using non-dairy butter and allergen-friendly chocolate chips. Read the labels of your favorite chocolate chips to check for dairy. You can find allergen-friendly chips in a special aisle of your supermarket.

Is this cookie cake recipe gluten-free?

You can make this recipe gluten-free by simply using your favorite gluten-free all-purpose one-for-one flour. These flours are amazing and make baking anything gluten-free easy!

How do I know when the cookie cake is done?

I prefer to bake it for an exact time of 20 minutes in a fully preheated oven to ensure a chewy cookie. However, you can check for doneness based on color if you prefer. The cookie cake will continue to bake for a bit after it is removed from the oven so be careful not to leave it in the oven too long.
