It’s time for another Dessert Challenge! I love these challenges because I am inspired to create simple recipe for a dessert with the ingredient combinations. The Dessert challenge was created by Sheryl from Lady Behind the Curtain. This month’s ingredients were cocoa (or chcolate pudding) and marshmallows! What a perfect combination for the month of January! There were so many things I would love to make with these. I decided to develop a recipe for Cocoa Cookies with Marshmallow Icing.
Cocoa Cookies with Marshmallow Icing
Cocoa Cookies
1/2 cup butter, softened 1 cup powdered sugar 1/1/2 cups flour 1/2 cup granulated sugar 1 tablespoon plus 1 teaspoon cocoa powder (= 4 teaspoons) 1 egg Pre-heat oven to 375°. In a bowl, mix together softened butter and granulated sugar and egg. Add flour and powdered sugar and cocoa. I would suggest using a mixer to blend well. Roll into one inch balls and press lightly onto greased or lined cookie sheet Bake on cookie sheet at 375° for 11-13 minutes. Frost with icing, when cool.
Marshmallow Icing
1/4 cup butter, softened (margarine ok) 2 cups powdered sugar 1 cup marshmallow creme 1-2 tablespoons milk Beat the butter in a mixer on low and slowly add powdered sugar. Add marshmallow creme and milk until desired consistency is reached. I wanted a thicker icing to use a decorator tube, but these could also have been drizzled with a thinner icing by adding a little more milk. The cookies are light and soft and the marshmallow frosting is a nice complement to the chocolate.

I just pinned these. And then my husband offered me some crab cakes, which smell divine, but once you see Cocoa Cookies with Marshmallow Icing, it’s really hard to go back to savory thoughts.
