I made a one point Weight Watcher dessert last night. It was by accident, sort of.
You see with summer coming up, I have been trying to eat a salad as a main meal several days a week to eat healthier and shed a couple of pounds. Sometimes I will make soup or grilled vegetables as a nice, hearty meal. But I still like a little sweet something for dessert.
I do not count calories, but I do I use the Weight Watcher points plus system because it is pretty simple to remember when choosing snacks and desserts. I can tell when I have had a bad week - food wise.
So last night, while we were watching by dvr episode of last week's The Voice, I decided to make a little "healthy dessert". The best part? Only 3 ingredients and barely one point. It was very tasty and also filling.
Side note - I was so hoping Adam would steal Morgan and he did at the last second in the Morgan vs. Stevie Jo sing off!
Here are the ingredients you will need.
Strawberry Dessert (serves 2)
⅔ cup strawberries
⅓ cup fat free whipped dessert topping
6 cinnamon apple mini rice cakes
Wash strawberries and cut off stems. Dice into pieces and place in a bowl or parfait glass. Add a dollop of Fat Free whipped ropping. I used a generic brand and it tasted great.
Top with several cinnamon sugar mini-rice cakes. You can even top with a little extra cinnamon if you wish, but it tastes great as is.
The combination of sweet, cream and crunchy cinnamon is marvelous!
You could also use other fruits such as kiwi or mango. The whipped topping and strawberries are zero points using the Points plus values. The mini rice cakes are 2 points for 7 cakes so total value is one. You can learn more about the Points Plus system at the Weight Watchers Website. I just ate a bowl of Strawberries a couple days ago but mine were not one point - they were mexican style with bananas, sour cream and a load of sugar. hehehehe

Yum! I'm usually a bit wary of low calorie desserts.. I usually want ice cream or cookies.. but this looks totally satisfying. We grow our own strawberries in the spring and we even have some annuals that grow into October. I really can't wait to taste them again. There's nothing better, more local and more organic than your own berries!

Who would of thought that something so simple would be so good! My children absolutely love rice cakes and this is a much healthier solution than cookies and cake. Thank you for sharing.
