Rocky Road Candy Ingredients

These rocky road candy clusters use simple ingredients you can easily find.
Marshmallows – I use mini marshmallows, but you can use large marshmallows, cut into quarters. Either way be sure to use use fresh, soft marshmallows
Semi-sweet chocolate chips – other flavored chips also work great
Unsalted butter
Sweetened condensed milk – note: this is not the same as evaporated milk
Vanilla extract – use a quality extract for the best flavors
Peanuts – roasted and salted

Substitutions & Alterations
- You can substitute other types of nuts for peanuts. Walnuts, cashews, pecans, almonds, or pistachios all work well.
- You can make a white rocky road by using white chocolate chips.
- Add a little sprinkle of sea salt to the top of the bars for a salty sweet treat
- You can sub almond extract for an extra boost of flavor.
- You can add M&Ms or chopped vanilla wafer cookies for a fun twist.
How to Make Easy Rocky Road Candy

Step 1 – In a large microwave-safe bowl, add chocolate chips, sweetened condensed milk, and butter. Melt chocolate in short burst of 30-second intervals until smooth.

Step 2 – Add vanilla extract to the melted chocolate mixture. Combine nuts and marshmallows in a separate bowl.

Step 3 – Fold in the peanuts and marshmallows into the chocolate. Mix to coat.

Step 4 – Spread the mix into the pan.

Step 5 – Chill and cut into squares.

Serve sliced Rocky Road bars as part of a Christmas Party Dessert Board or holiday dessert table. They’re also just a great treat while hanging out with the family watching Christmas movies.
They go great with a hot latte or some Creamy Caramel Hot Chocolate or Peanut Butter Hot Chocolate.
I also love these handcrafted candy bars with ice cream! Put a whole bar on top of or under some vanilla or chocolate ice cream, or chop a bar up into smaller pieces and top your ice cream with it.
How to Store Rocky Road Candy
Store remaining candy pieces in an airtight container in the fridge for 1-2 weeks.
You can also freeze rocky road candies for up to 2 months. I like to arrange all the sliced candy bars on a parchment paper or wax paper lined baking sheet so they’re not touching and place the tray in the freezer for a few hours. When the bars are frozen, wrap them in plastic wrap and transfer them to a freezer safe bag, date, and store.

Equipment
- Microwave Safe bowl
- 13 x 9 Baking Dish
Ingredients
- 10 oz. miniature marshmallows
- 12 ounces semisweet chocolate chips
- 2 tbsp. unsalted butter
- 14 ounces sweetened condensed milk
- 1/2 tsp vanilla extract
- 2 cups roasted & salted peanuts
Instructions
- Line a 9×13 inch baking dish with parchment paper and set aside.
- In a microwave safe bowl, heat the chocolate chips, sweetened condensed milk, and butter for 30 second increments, stirring well in between, until melted and smooth.
- Stir in vanilla extract.
- Fold the marshmallows and peanuts into the chocolate mixture.
- Spread the mixture in the 9×13 inch dish, smoothing as evenly as possible.
- Chill in the refrigerator for at least 2 hours, and then cut into squares
