Rocky Road Candy

Ingredients

  • 10 oz. miniature marshmallows
  • 12 ounces semisweet chocolate chips
  • 2 tbsp. unsalted butter
  • 14 ounces sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 2 cups roasted & salted peanuts

Instructions

  • Line a 9x13 inch baking dish with parchment paper and set aside.
  • In a microwave safe bowl, heat the chocolate chips, sweetened condensed milk, and butter for 30 second increments, stirring well in between, until melted and smooth.
  • Stir in vanilla extract.
  • Fold the marshmallows and peanuts into the chocolate mixture.
  • Spread the mixture in the 9x13 inch dish, smoothing as evenly as possible.
  • Chill in the refrigerator for at least 2 hours, and then cut into squares

Notes

  • Be sure that candy has cooled completely before cutting
  • Store in an airtight container in the refrigerator. You can also freeze this fudge.
