Ingredients for Roasted Red Pepper Spinach Pinwheels
Large Flour Tortillas. You can use normal tortillas or whole wheat tortillas, or even wraps to make these pinwheels.
Cream Cheese. I recommend you purchase name-brand cream cheese. A flavored cream cheese or plain cream cheese will both work.
Roasted Red Peppers. These come in a jar in the section where the olives, pickles, or capers are found.
Baby Spinach. These smaller spinach leaves have minimal stems and can be eaten whole, requiring very little prep. You can usually even find them in a pre-washed package. They fit very nicely in the wrap even if you don’t take the time to chop them.
Mozzarella Cheese. You could use different types of shredded cheese – cheddar, an Italian or Mexican blend, colby jack, or pepper jack would all work. If you love parmesan, you could add that as an additional cheese, but it probably wouldn’t be quite right on it’s own.

Step by Step Instructions Overview

Step 1 – Chop spinach and red peppers. Set aside.

Step 2 – In a bowl, mix cream cheese, garlic powder and basil. Spread over tortilla.

Step 3 – Arrange the spinach and roasted red peppers all over each of the tortillas.

Step 4 – Top with a sprinkling of cheese all over each of the tortillas. Tightly roll up tortillas and wrap in plastic wrap.

Step 5– Chill for 2 hours. Then they are ready to slice.

Step 6 – Arrange on a serving platter.

Yes! You can buy gluten-free-flour tortillas or wraps to use for making pinwheels. I do not recommend corn tortillas, since they will break instead of folding.
Do I have to use cream cheese?
Pinwheels definitely need some kind of spread to hold them together. This particular combination could also be made with hummus, ranch dressing, or a flavored cream cheese or dip of some kind.
How do I store leftover pinwheels?
You can wrap the leftovers in plastic wrap or place them in an airtight container in the refrigerator and keep them for two or three days.
Can I freeze spinach pinwheels?
Yes. Freeze before cutting, while still wrapped in plastic wrap then thaw to slice and serve. Leftovers can be frozen in an airtight container but will dry out more.

- Cold tortilla wraps will stay together and will be easier to cut. Make sure to plan ahead for time to chill the wrap before you slice it.
- Be sure to drain the roasted red peppers or the spread will be too runny.
- .Room temperature cream cheese is easier to spread. Remove it from your refrigerator a couple hours before you plan to make the roasted red pepper spinach pinwheels.
- Be sure to use a good, sharp serrated knife to cut your pinwheels neatly.

Equipment

Ingredients
- 4 large flour tortillas
- 8 oz cream cheese softened
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 12 oz jar roasted red peppers drained of liquid
- 1 cup baby spinach
- 1 cup mozzarella cheese shredded
Instructions
- Chop the spinach.
- In a medium bowl, mix cream cheese, garlic salt and basil until blended.
- Spread the cream cheese mixture onto each of the tortillas. Sprinkle ¼ of the spinach over the spread
- Arrange roasted red peppers all over each of the tortillas.
- Sprinkle cheese all over each of the tortillas.
- Start at one end, and tightly roll each of the tortillas.
- Wrap each of the tortilla rolls in saran wrap.
- Chill for 2 hours in the refrigerator.
- Unwrap, then cup off the ends, and cut into 1 inch pieces.
