Layers of hummus, turkey, sun-dried tomatoes and cucumber are wrapped in a tortilla to make an easy after school snack, lunch box meal, or party appetizer.

Why This Recipe

Convenience. Use store-bought ingredients to pull these appetizers together very fast. All you have to do is layer all the ingredients and then make a nice, tight roll. After slicing them, you have an attractive pinwheel appetizer.

Crowd-pleasing appetizer. These are a fun and tasty finger food perfect for any party. Easy to grab-and-go, they also work for an after school snack, easy lunch, and packable meal for lunch boxes or picnics.

Make-ahead convenience. You need to refrigerate these for at least one hour, so that means you have time to make other things or take care of other details. Refrigeration helps all of the flavors meld and the tortillas get used to being rolled.

  • Sharp Knife. For dicing cucumbers and tomatoes.
  • Serrated Knife. To slice up the hummus pinwheels without breaking them apart or unrolling them as you slice.
  • Platter. To serve the finished pinwheels at your event.

  • Large Flour Tortillas. You can use any variety of tortillas, or use a flat bread wrap instead. They are very similar. Low carb options work.
  • Hummus. Pick your favorite flavor.
  • Slices of Turkey Lunch Meat.
  • Sun Dried Tomatoes. Drain these on paper towel.
  • Cucumber. Diced in small pieces.

Step 3 – Then arrange turkey on the tortilla. Overlap the edges of the slices slightly.

Step 6 – Starting at one end of the tortilla, make a tight roll. Wrap the rolled tortillas in plastic wrap or parchment paper. Refrigerate for one hour in an airtight container or until you are ready to serve them.

Step 7 – Unwrap the tortilla rolls, and use a serrated knife to slice the tortillas into one inch pieces.

Tips for Best Results

Dicd the cucumber up into small pieces that will be easy to spread on the tortilla base for the hummus pinwheels. You could also consider mashing or shredding the cucumber.

Sun-dried tomatoes should be drained and diced small. The smaller everything is diced the easier it is to spread and roll the tortilla, and the better it will stay rolled up.

Heat the tortillas very briefly in a skillet or microwave so if you are having trouble with them breaking apart or crumbling. I like to wrap them in a moist towel and microwave them.

Leftover hummus pinwheels should be refrigerated and will keep for one or two days. Keep them in an airtight container.

You can also freeze leftovers for up to three months in an airtight container. If you can wrap them in plastic wrap or parchment that will help them hold together. Thaw in the refrigerator or you might even be able to thaw them in your lunch box. Freezing these may change the texture of the hummus.

Variations and Substitutions

  • Add feta cheese, cheddar cheese, or parmesan.
  • Use fresh tomatoes instead of sun-dried tomatoes.
  • Drizzle with balsamic glaze.
  • Add drained pimentos or fresh red pepper.
  • Instead of hummus, you could start with ranch, honey mustard dressing or softened cream cheese.
  • Instead of turkey lunch meat you can use chicken, ham, or roast beef lunch meat or use shredded chicken.

Ingredients
  

  • 4 large flour tortillas
  • 10 oz hummus
  • 16 slices of turkey lunch meat
  • 3 oz sun dried tomatoes
  • 1 cucumber

Instructions
 

  • Peel the cucumber, and dice into small pieces.
  • Spread ¼ of the hummus onto each tortilla.
  • Arrange 4 slices of turkey onto each tortilla.
  • Arrange ¼ of the sun dried tomatoes, and a ¼ of the cucumber onto each tortilla.
  • Start at one end of the tortilla, and tightly roll until you meet the other end.
  • Wrap the rolled tortillas in plastic wrap.
  • Refrigerate for 1 hour, or until ready to serve.
  • Using a serrated knife, cut the tortillas into one inch pieces, discarding (or eating) the ends.
  • Arrange on a platter to serve.
