Spaghetti Aglio E Olio

This Spaghetti Aglio E Olio is a wonderful, light pasta that is perfect for any meal and oh so easy! 

This simple pasta recipe just takes a few ingredients and almost no time at all. It is also the perfect dish to use your fresh tomatoes and basil - items you can grow in your garden!

How was your weekend friends? Did you enjoy being outdoors? We were at our first football game of the season and it felt nice to be outdoors!

This Spicy Spaghetti with Basil and Tomatoes is a garlic and olive oil based pasta sauce. Sometimes I want to keep the pasta dish a little simpler by using a spaghetti olive oil sauce. Also known as Spaghetti Aglio E Olio, I first tasted a similar dish when I was in Italy and loved the change up from traditional spaghetti with meat sauce.

Pasta Aglio Olio

 

It is a lot lighter and the flavors of the basil and garlic really shine.  This pasta was originated in Naples, Italy and we visited there two years ago on a wonderful trip.

This dish has just a few ingredients and is quick to make. It reminds me of being back in Italy where the days were wonderful and the evenings were warm and blissful.

Just two steps, make the pasta,

And then sauteing the vegetables in olive oil.

The ingredients come together very quickly for this beautiful pasta dish.

This Spaghetti with garlic and olive oil recipe is also very easy on the budget! With fresh tomatoes and basil, it is a nice way to incorporate the fresh produce.

Ingredients
  

  • 1 10 oz box spaghetti
  • ¼ cup plus 2 tablespoons olive oil
  • 6 Tomatoes
  • 16-18 fresh basil leaves
  • 4 cloves garlic
  • 2 teaspoon red pepper flakes
  • 1 cup grated parmesan cheese

Instructions
 

  • Cook spaghetti per package directions
  • Wash tomatoes and basil leaves, drain
  • chop tomatoes and pull off basil leaves
  • In a skillet, heat olive oil over low heat
  • Add tomatoes, garlic, basil and red pepper flakes
  • Cook about 4-5 minutes
  • When pasta is al dente, drain.
  • Top with tomato and basil mixture
  • Top with grated parmesan cheese.

    And our garden is bursting with tomatoes and basil. We always have garlic too. In!
