Hello, friends! This week we have been busy running errands and getting ready for all of the things coming up on our calendar. I strive to be ahead of the game and am always making my lists of what I need to do make my life easier. With so many things going on I made sure to stock up on a few must-have items for the season at the grocery store last weekend.
Yesterday, I stopped at the grocery store and picked up some fresh vegetables and the Cubos de Knorr® Selects Caldo de Vegetales. These flavorful vegetable bouillon cubes are a really great ingredient to keep on hand and I love that it has no artificial flavors, no artificial colors, and no preservatives.
If you have never used these great recipe helpers, I encourage you to try them. They not only make a great base for soups, they also add a lot of flavor to stews, casseroles and sauces. I love products that do double-duty.
Knorr Selects has 30% less ingredients, a cleaner label, and 20% less sodium than most traditional bouillons and they have no added preservatives or MSG. I find that bouillon helps me make a quick dinner, without spending a lot of money, and that is always helpful. I used the vegetable version for this recipe, but Knorr also has Cubos de Knorr Selects Caldo de Tomate (tomato), as well as Cubos de Knorr Selects Caldo de Pollo (chicken), that can really boost your meals with spices and flavors. Soup can be one of the quickest and easiest meals to prepare. This simple vegetable soup recipe from scratch is made with just a few fresh ingredients and I just love that it incorporates so many fresh produce items. It is a nice way to add more vegetables to your meal plan deliciously and easily.
This easy vegetable soup recipe all comes together in a single pot for easy preparation and even easier clean up. You can also double this recipe if you need more servings.
You can also switch up the vegetables from time to time too. For example, sometimes I will add yellow squash instead of zucchini or throw in some of those cute, colorful mini bell peppers. It changes up the soup and allows you to use what you have on hand, thanks to the base that Knorr provides.
This chunky vegetable soup is filling and delicious. I like to make a little extra and then have a cup of it the next day with a salad or sandwich.
This is already a great 30-minute meal, but to save a few more minutes, we have some time-saving tips for you.
Cut your vegetables the evening before so that they are ready to add to your soup when you are ready.
You can use a bag of frozen vegetables in place of the fresh carrots and zucchini to save preparation time. Frozen vegetable soup takes almost no time at all to put together.
You can use garlic in a jar to save time.
Shopping list for Quick Vegetable Soup:
Cubos de Knorr Selects Caldo de Vegetales (14.1 oz)
2 carrots
2 bunches celery
1 onion
1 clove garlic
2 potatoes
2 medium tomatoes
1 zucchini
1 small can mild green chilis
Easy Vegetable Soup
1 tablespoon oil
¼ cup onion, chopped
2 stalks celery, sliced ¼” slices
2 carrots, peeled and sliced
1 clove garlic, peeled and minced
¼ cup Cubos de Knorr Selects Caldo de Vegetales (4 vegetable bouillon cubes)
6 cups water
2 russet potatoes, peeled and cubed
1 medium zucchini, sliced
2 small tomatoes
2 tablespoons mild green chilis
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon cilantro, chopped (optional)
Directions
Always wash all produce prior to preparing and cutting.
Heat oil in stock pot over medium-low heat.
Add onion, celery, carrots and garlic
When onions become translucent, add 6 cups of water.
Raise heat to medium until boiling
Add Cubos de Knorr Selects Caldo de Vegetales and blend fully.
Add potatoes and reduce heat to medium.
Allow potatoes to cook 6-8 minutes.
Add zucchini, tomatoes, salt and pepper.
Cook another 6-8 minutes and serve.
Top with cilantro and serve.
