Why you will love this recipe

  • Delicious – This soup has all the rich, hearty, cheesy flavor of classic lasagna in every single spoonful. It is warm, filling, and seriously satisfying.
  • Easy Recipe – This slow cooker lasagna soup comes together quickly with simple ingredients. Most of it is hands-off cooking time, so you can set it and forget it until dinnertime.
  • Festive – This is a wonderful recipe for family gatherings, cozy fall and winter dinners, or any night you need a meal that feels a little extra special.

Ingredients for crockpot lasagna soup

  • Lean ground beef – I use lean ground beef (80/20) here to keep the broth from getting too greasy. You can also use ground turkey or Italian sausage for a different flavor.
  • Chicken broth – This is the base of your soup. Chicken broth gives it a lighter color and flavor that works beautifully with the marinara.
  • Marinara or pasta sauce – Use your favorite jarred sauce here. This is where a lot of your flavor comes from, so a sauce you really love makes a big difference.
  • Lasagna noodles – Regular lasagna noodles broken into pieces work great. You can also use other pasta shapes like rotini or penne in a pinch.
  • Heavy cream – This is what makes the broth so silky and rich. Stir it in right at the end for the creamiest result.
  • Toppings – Ricotta, shredded mozzarella, and fresh parsley are added right at serving time, just like a real lasagna. Do not skip these – they make the whole bowl.

Time Saving Tips ⏰

  • Brown the beef the night before and store it in the refrigerator. In the morning, just add everything to the crockpot and you are ready to go.
  • Break your lasagna noodles into smaller pieces before adding them so they are easier to scoop into bowls.
  • Keep a close eye on your noodles once you add them – they can go from al dente to mushy quickly, so check them every 15-20 minutes.
  • For the richest, creamiest broth, always stir in the heavy cream at the very end, right before serving.

Substitutions and variations

  • Swap lean ground beef for ground turkey, ground chicken, or a pound of Italian sausage
  • Beef broth works well in place of chicken broth for a deeper soup taste
  • Cottage cheese can stand in for ricotta if that is what you have
  • Add baby spinach at the end for a pop of green
