Chocolate Curls Cupcakes

I am keeping to my commitment of making more cupcakes this year and so today I am sharing a recipe for chocolate frosted cupcakes with white chocolate mint curls. If you have ever wondered how to make your own chocolate curls, today is  your lucky day. I love using these in custom colors made with food coloring for special occasions.

These white chocolate candy curls or mint shavings add a nice dimension to desserts. They look so festive and different. For this recipe, I wanted to do just that. I made the shavings out of white chocolate chips and tinted them green to pretty them up for Saint Patrick’s Day.

I also flavored them with mint because it is fun if they have some flavor to them.  It is an easy way to dress up your dessert with chocolate shavings. This works on cakes, cupcakes, cookies and ice cream.

For the cupcakes, I used a yellow boxed cake mix because I wanted to save some time. But every time I use a boxed cake mix I always use homemade buttercream frosting (recipe below). It just tastes better than any canned frosting and it is so easy to make! Here is the chocolate buttercream frosting I made:

How to make your own Chocolate Curls

Chocolate Mint Curls
For the mint curls, I took 1 cup of white chocolate chips and microwaved on 50% for about 3 minutes.

Since all microwaves are a litte different, check after two minutes and continue in 30 second increments until chips are melted.

Once you can smash them, add food coloring and flavoring.  I added 1/2 teaspoon of peppermint extract.

Then once it was combined, I put the melted chocolate on a piece of wax paper to harden.

Catch up on some reading or errands and after a couple of hours it should be fully hardened.  Peel the chocolate from the wax paper and using a potato peeler, peel off the chocolate.

You can save the curls for later, or use them to decorate right away.  Depending on how thick they are they may be quite delicate so keep that in mind. In just minutes you will have your own custom chocolate curls!

Easy Chocolate Buttercream Frosting recipe

1/2 cup butter, softened

4 cups powdered sugar

1/4 cup cocoa powder

4 tablespoons milk

1 teaspoon vanilla

Cream butter using electric mixer.  Slowly add powdered sugar and milk until blended.  Add cocoa powder and vanilla. Beat on high until peaks form. This frosting is really good by the way.  I have spent years getting it to just the right flavor and consistency.  Before you make the frosting, make the curls so that they are ready to use.

I frosted my cupcakes and added the chocolate curls to the top for some decoration and minty flavor. They are so festive and unique!
