Slow Cooker Mexican Street Corn Dip Ingredients

  • Frozen corn – No need to thaw it first. Frozen corn works beautifully here too.
  • Cream cheese – Softened to room temperature before adding so it blends smoothly.
  • Sour cream – Adds a nice tangy creaminess to the base. Add a little extra at the end if you want it even creamier.
  • Pepper jack cheese – Brings the melty, gooey texture and just the right amount of heat.
  • Tajin – This is the magic ingredient. Smoky, tangy, and a little spicy, it is what gives this dip that classic street corn flavor.
  • Lime juice – Fresh if possible.
  • Queso fresco – Crumbled on top at the end. It adds a salty, crumbly finish that really makes this dip feel like the real deal.
  • Fresh cilantro – For topping. If you are not a cilantro fan, you can leave it off or swap it for sliced green onions.
