This easy macaroni salad recipe is a classic!
The weather is beautiful here in California this weekend, so we are having a BBQ at my mother's house for Mothers' Day. I am making a macaroni salad because there is nothing like comfort food when seeing my parents. This recipe is quick to put together, which fits in with my schedule.
It is also easily doubled and you can make it ahead too! I think it might even taste better the day after. This easy macaroni salad recipe is from a home economics class. It was printed on old purple ink on white paper and I wanted to publish it here before it fades.
The recipe is a nice mustard based macaroni salad, with just a hint of mustard. Perfect for a picnic or boxed lunch, it truly is a classic recipe.
Easy Macaroni Salad Recipe
2 ½ cups mayonnaise
1 cup chopped celery
¾ cup chopped bell peppers (any color)
½ cup chopped onions
¼ cup yellow mustard (prepared)
1 10 oz. can black olives (sliced or chopped)
2 tablespoons apple cider vinegar
½ teaspoon salt

1 16 oz. package elbow macaroni
1. Cook the macaroni according to package directions. Rinse in cold water and set aside in the refrigerator.
2. Mix remaining ingredients in a large bowl. Once combined, add cooked macaroni and mix well.
3. Chill in refrigerator for at least an hour or overnight.
This recipe is great for a side dish, a picnic or with sandwiches and hamburgers. It is a classic recipe that is a favorite at our home.
