Why This Recipe is Special
The secret to great Snickers Rice Krispie treats is not just dumping candy into melted marshmallows and hoping for the best. You need the right marshmallow-to-cereal ratio so the base stays chewy but not gummy. This recipe involves a layering technique that keeps the flavors distinct, yet blended perfectly.
Ingredients

- Butter – or margarine
- Marshmallows Mini marshmallows melt faster and more evenly, but large ones work fine if you stir well. Do not use marshmallow fluff. It does not set the same way.
- Rice Krispies cereal – I prefer the original, not off-brand puffed rice, which doesn’t taste the same to me.
- Salted roasted peanuts – be sure to use salted and not unsalted.
- Caramel sauce – store-bought or homemade caramel sauce.
- Chocolate Wafers or Milk chocolate chips .
- Vanilla Extract
- Sea salt is optional but highly recommended.
Equipment and Kitchen Tools
- Large Saucepan
- 9×13-inch baking pan
- silicone spatula
- sharp knife or a bench scraper, (my favorite for neat even cuts)

Step 1 – Melt butter and marshmallows together over medium-low heat. Prep your pan first. Line a 9×13-inch pan with parchment paper.

Step 2 – Add marshmallows and stir constantly with a silicone spatula for 3 to 5 minutes until melted. You want the marshmallows fully melted and smooth, no lumps.

Step 3 – Remove from heat and immediately fold in the Rice Krispies. Fold in peanuts.

Step 4 – Work quickly but gently to mix. You want every piece of cereal coated, but if you stir too aggressively, you will crush the cereal and lose that signature crispy texture.

Step 5 – Press the mixture into the prepared pan. Use a bench scraper or offset spatula to press it down evenly.

Step 6 – Spread the caramel suace over the base layer.

Step 7 – Scatter the peanuts over the caramel layer evenly.

Step 8 – Let the bars set and melt the chocolate layer. Spread the chocolate over the peanuts.

Step 9 – Cut bars with a sharp knife.

Step 10 – Serve or store with parchment paper.
Substitutions and Variations
Go full chocolate. Replace half the Rice Krispies with Cocoa Krispies for a chocolate nougat base.
Add pretzel pieces. Crushed pretzels folded into the base or layered in add extra salt and crunch. This works especially well if you reduce the peanuts slightly.
Peanut forward – stir a little peanut butter into the marshmallow mixture for even more peanut flavor.
Storage Suggestions
Store in an airtight container at room temperature, for up to three days. Use parchment paper between layers to prevent sticking.
If your kitchen is warm or humid, the caramel and chocolate can get too soft and messy. In that case, refrigerate them.
Raquel’s Time Saving Tips ⏰
- Line your pan with parchment paper before cooking for faster cleanup and easy lifting when it’s time to slice.
- Use mini marshmallows because they melt faster and more evenly than large marshmallows.
- Spray or butter your spatula before pressing the mixture into the pan so it doesn’t stick and you can work faster.

- Remove from the pan. Cut into 12 bars and enjoy!
Notes
Adding the caramel while the cereal layer is still warm helps it soak in slightly, giving you that candy-bar-style texture.
Letting the bars sit at room temperature for about 15 minutes before transferring to the freezer helps the layers set evenly and prevents the chocolate from cracking when sliced.
