Made with a handful of simple pantry staples like oats, granola, brown sugar, and butter, these cookies are perfect for quick snacks, lunch boxes, and afternoon treats with coffee or tea.

Chewy Homemade Granola Cookies

Ingredients
- 1/2 cup butter softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup all purpose flour
- 1 cup granola
- 1/2 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 cup raisins
Instructions
- Preheat the oven to 350 degrees F. Prepare a cookie sheet with parchment paper.
- In a medium bowl, mix together softened butter, light brown sugar, granulated sugar, vanilla and egg.
- Add flour, baking soda, baking powder and blend.
- Fold in granola, oats and raisins.
- Scoop out dough into rounded teaspoons onto the prepared baking sheet
- Bake in oven for 14-16 minutes until bottoms are golden brown.
- Let cool.
Notes
- Let cookies cool before removing from cookie sheet.
- Slightly underbake the cookies for a softer chewy texture.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Chill the dough for 20–30 minutes if your cookies spread too much.
- Use parchment paper or silicone baking mats for easier cleanup.
- For crispier cookies, bake 1–2 minutes longer.
- Add flaky sea salt on top before baking for bakery-style flavor.
- Press a few extra chocolate chips onto the tops before baking for prettier cookies.
- If using sweet granola, you can slightly reduce the sugar in the dough.
