- 1/2 cup butter softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup all purpose flour
- 1 cup granola
- 1/2 cup old fashioned oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 cup raisins
Preheat the oven to 350 degrees F. Prepare a cookie sheet with parchment paper.
In a medium bowl, mix together softened butter, light brown sugar, granulated sugar, vanilla and egg.
Add flour, baking soda, baking powder and blend.
Fold in granola, oats and raisins.
Scoop out dough into rounded teaspoons onto the prepared baking sheet
Bake in oven for 14-16 minutes until bottoms are golden brown.
Let cool.
- Let cookies cool before removing from cookie sheet.
- Slightly underbake the cookies for a softer chewy texture.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
