Ingredients for Grasshopper Cookies

- Always use fresh ingredients for the best results in your cooking and baking.
- Chocolate cake mix – Use your favorite brand
- Butter – you’ll use this for 2 parts of the recipe. Some melted and some softened.
- Eggs – I use large, fresh eggs in all my recipes.
- Powdered sugar – also known as confectioners’ sugar
- Milk – Use whole milk
- Mint extract – use a quality flavoring extract for the most flavor
- Green gel food coloring
- Semi-sweet chocolate chips – you can also use a variety of chips
- Heavy cream – use heavy whipping cream for best results
- Andes mints

Substitutions & Alterations
- These cookies can also be made with a vanilla cake mix or white cake mix for a fun variation.
- You can use liquid food coloring if you don’t have gel.
- If you don’t have powdered sugar, you can make your own by using a high powered blender or food processor to grind granulated sugar into powdered sugar.
- You can top these cookies with chopped nuts, chocolate chips or chocolate curls.
How to Make Grasshopper Cookies

Store cooled cookies in an airtight container at room temperature for up to 3-4 days.
You can also freeze the cookies on a baking sheet and transfer to a freezer safe bag for up to 4 months. Allow the cookies to thaw completely before eating.

Why is it called “Grasshopper” Cookies?
“Grasshopper flavor” generally refers to the combination of mint and chocolate. The name was given after the creation of the Grasshopper, a chocolate mint cocktail created in New Orleans in the early 1900s and later adopted for the Grasshopper Pie.

Equipment

Ingredients
- 1 box of chocolate cake mix
- 1/2 cup butter melted
- 2 large eggs
- 1/2 cup butter softened
- 3 cups powdered sugar
- 3 tbsp. milk
- 1 tsp. mint extract
- green gel food coloring
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
- 1/2 cup Andes mints
Instructions
- For the Cookies
- Preheat your oven to 350 and line a baking sheet with parchment.
- In a large mixing bowl, mix together the cake mix, melted butter, and eggs. You should end up with a sticky dough. If the dough is too dry and not sticky, add 1 tbsp. water, and mix well again.
- Use a 1 1/2 inch cookie scoop to scoop the cookies into your parchment lined baking sheet, about 2 inches apart.
- Bake for 9-11 minutes. Allow the cookies to cool for 4-5 minutes on the baking sheet, then move to a wire rack to cool completely.
- For the Chocolate Ganache
- In a medium saucepan, add the semi sweet chocolate and heavy cream.
- Heat over medium low heat, stirring constantly, until chocolate is melted. Remove from the heat and set aside.
- For the Mint Frosting
- Beat together the butter and powdered sugar. You’ll get a super light and fluffy mixture.
- Add the mint extract and 1-2 tsp. of the green gel color, and mix well to combine. Frosting will be thick.
- Use the milk, about 1-2 tbsp. at a time to thin out the frosting. You want it to still be stiff enough to hold its shape.
- Once the ganache has cooled, add the frosting to your cookies, spreading it so that there is a small dip or divot in the frosting towards the center of each cookie. This is to hold the ganache.
- Use a small spoon to carefully spoon a bit of the ganache onto each cookie.
- Set the cookies in the refrigerator for about 5 minutes to set.
- Chop the mint candies roughly, and then add to the cookies.
