Cadbury Mini Egg Cookies

These Cadbury Mini Egg Cookies are a fun and festive Easter Treat. They are easy to make and only require a few simple ingredients, making it my kind of recipe.
As a productivity manager, I understand how precious your time is, especially when it comes to meal and snack preparation. This easy Easter recipe takes minimal prep time, so you can enjoy them quickly.

This recipe is a fun twist on traditional chocolate chip cookies. Instead, of chips, I used Cadbury mini eggs. Similar to my Easter M&M cookies, these cookies use Easter candy for extra chocolate flavor.
These cookies have a rich, chewy texture and the combination of the chocolate chips and mini Cadbury eggs is delicious!

Mini Cadbury Egg Cookies Ingredients

- Butter, I like to use softened unsalted butter
- Sugar – this recipe uses both granulated sugar and light brown sugar
- Egg
- Pure vanilla extract
- All purpose flour
- Salt and baking soda
- Cadbury mini eggs – I recommend using Cadbury Mini Eggs. The slight crunch of the candy shells adds an added texture and crunch that makes these cookies special. You can find these eggs at your local grocery store during Easter season.
- Semi-sweet chocolate chips

Make it Your Own – Substitutions
- You could easily substitute white chocolate chips or milk chocolate chips for the semi-sweet chocolate chips.
- Mix in crushed Graham crackers for an Easter s’mores twist.
- Swap semi-sweet chips for white chocolate or peanut butter chips.
- If you cannot find Cabury mini eggs, Hershey’s makes a similar version of these milk chocolate filled eggs.
- Store in an airtight container.
How to Make Cookies with Cadbury Mini Eggs
Step 1 – Mix wet ingredients

Step 4 – Spoon Cookie dough balls onto Baking Sheet

Time Saving and Expert Tips
- You can make the dough ahead of time and chill until ready to bake.
- Similarly, you can prepare the dry ingredients ahead of time and just place in a sealed baggie before the day you plan to bake them. You can also chop the candies ahead of time, I find this easy prep step saves a lot of time.
- You can use a store-bought chocolate chip dough and add chopped Cadbury eggs to the dough prior to baking. Be sure to check baking time on the dough since it will be different.
- Store leftover cookies in an airtight container.

Cadbury Mini Egg Cookies
Equipment
- large mixing bowl
- baking sheet or cookie sheet
- Parchment Paper
Ingredients
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup Cadbury mini eggs roughly chopped
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper, set aside.
- In a large mixing bowl, beat together butter and sugars, until smooth. Add the egg and vanilla extract, and mix until combined.
- In a separate bowl, whisk together all purpose flour, salt, and baking soda.
- Add the dry ingredients to the wet, slowly, mixing until just combined, and a crumbly dough begins to form.
- Fold in the chopped Cadbury eggs and chocolate chips.
- Use a medium cookie scoop to scoop the cookies onto your parchment lined pan.
- Bake 9-11 minutes, until cookies are starting to turn golden brown at the bottoms, cookies will still be pretty pale.
- Allow the cookies to cool on the baking sheet for 5 minutes before moving to a cooling rack.
