Preheat your oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper, set aside.
In a large mixing bowl, beat together butter and sugars, until smooth. Add the egg and vanilla extract, and mix until combined.
In a separate bowl, whisk together all purpose flour, salt, and baking soda.
Add the dry ingredients to the wet, slowly, mixing until just combined, and a crumbly dough begins to form.
Fold in the chopped Cadbury eggs and chocolate chips.
Use a medium cookie scoop to scoop the cookies onto your parchment lined pan.
Bake 9-11 minutes, until cookies are starting to turn golden brown at the bottoms, cookies will still be pretty pale.
Allow the cookies to cool on the baking sheet for 5 minutes before moving to a cooling rack.
