What is blackened chicken?
Blackened chicken is chicken coated in a flavorful spice blend and cooked over high heat until the outside develops a dark, seasoned crust. The bold color comes from the spices and cooking method, not from being burnt. - Toast buns in the same skillet after the chicken for less cleanup.
Tips for the Best Results
- Use a meat thermometer to check for an internal temperature of 165°F
- Let the chicken rest for a few minutes before slicing to keep in the extra moisture
- Cook in batches if needed for even cooking and a nice crust on each piece of chicken
- Press the seasoning gently into both sides of the chicken for full coverage
- Use a cutting board to slice the chicken against the grain for a better bite
- Toast the bread in butter over medium heat in a grill pan to get that golden color without burning

Substitutions and Variations
- Swap Texas toast with brioche buns, whole wheat buns, or kaiser rolls
- Try pepper jack cheese instead of Swiss for a spicy chicken sandwich
- Use chicken thighs or boneless skinless chicken breasts instead of cutlets
- Add red onion slices or brush onion rings with olive oil and grill them for extra flavor
- Stir in a bit of sriracha or Dan-O’s seasoning to the mayo for a spicy mayo twist
- Use sweet onions or pepper slices as toppings for added crunch
- If you’re skipping bacon, double up on cheese or add avocado slices for richness
