How to Make Pesto Chicken Sliders

Step 1 – Heat oven. Slice rolls and spread the bottom bun with pesto.

Step 2 – Add chicken on top of the pesto.

Step 3 – In a small bowl mix oil, garlic and herbs. Place the top half of buns on sandwich and brush oil mixture lightly on top of rolls.

Cover with aluminum foil and bake in a prepared pan.

Serve baked rolls with potato chips, coleslaw, or pasta salad.

Substitutions

  • baked chicken – instead of rotisserie chicken yu can use baked chicken thighs or chicken breasts.
  • garlic powder can be used in place of garlic salt but use sparingly as it is stronger than the salt.
  • Butter – you can brush the top o the rolls with a little melted butter in place of the oil. It will make a more golden brown crust.

Storage

Store leftovers in an airtight container in the refrigerator.

Top tip

  • Prepare Rotisserie Chicken – for convenience, I prepare the shredded chicken when I bring it home to use it later or the next day
  • Cook your own chicken: If you prefer to cook your own chicken, you can bake, grill, or poach it. Just be sure to shred it while it’s still warm so it absorbs the flavors of the pesto better. This recipe is also a great way to use up leftover chicken. shredded chicken next day
  • Extra flavor – If you’re using plain chicken, you can marinate it in olive oil, lemon juice, and your favorite herbs before cooking. You can also toss it with BBQ sauce or hot sauce for a kick.
  • Adjust the pesto -There are different kinds of pesto. If you like your pesto garlicky, add some extra garlic cloves. If you like it cheesy, add some grated Parmesan cheese.
  • Extra cheese– Extra cheese is always a good idea with chicken pesto sliders. Mozzarella cheese cheddar, and provolone are all good choices for delicious cheesy pull apart sliders.
  • Let the sliders cool slightly before serving –  This will help prevent them from falling apart..
