I am so excited that Thanksgiving is nearly here. I always love when the family gets together and we are going to be seeing family all week. First at Thanksgiving and then at a wedding for my sweet niece on Saturday.
The grocery stores are already getting crowded. I was in the baking mood this weekend and made these simple peppermint cookies. They only have 5 ingredients so they are super simple to make. For a different peppermint flavor I used these. I also used a baking mix for simplicity.

Simple Peppermint Crunch Cookies
1 ⅓ cups baking mix (Bisquick, Jiffy, etc)
¼ cup butter, softened
¾ cup brown sugar
1 egg

12 Peppermint Crunch Andes candies
Preheat oven to 375 °. Line cookie sheets with parchment paper.
Chop peppermint candies into bits.
In a bowl, mix together butter, sugar and egg until blended. Add baking mix and combine. Add peppermint candies.
Place cookies on parchment paper about 1 ½ inches away from each other. Do not skip the parchment paper or the ends may darken.
Bake 20 minutes until light brown. Cool on rack for a few minutes and enjoy!

I have never seen the peppermint crunch Andes candies but I love the looks of them! We're hosting this year. We traveled two years in a row and it was a bit much. So I'm sad to not be with my parents and siblings this year but we're with some friends and my husband's family. And we'll be home!
