How to make a Pop Rocks Cocktail Rim

Step 1 – Put the corn syrup on one saucer and pour the blue Pop Rocks onto the other. Dip the rims of the glass into the corn syrup.

Step 2 – Then turn glass upside down on the plate of pop rocks. Let set in the refrigerator 5 – 10 minutes.

Step 2 – Add the Cream of Coconut and vigorously shake well to combine (about 15-20 seconds).

Step 5 – Using a bar spoon or teaspoon, SLOWLY and gently pour the Sprite onto the back of the spoon, aiming at the inside edge of the glass. Carefully pour a sprite floater on the cocktail.

Ingredients
  

  • 3 ounces Sprite
  • 1 ounce Malibu Rum
  • 1/2 ounce Cream of Coconut
  • 1/2 ounce grenadine
  • 1 package blue Pop Rocks
  • light corn syrup for rim
  • maraschino cherries for garnish optional

Instructions
 

  • Put the corn syrup on one saucer and pour the blue Pop Rocks onto the other.
  • Dip the rim of the serving glass into the corn syrup and then into the Pop Rocks, making sure to coat well. Place in the refrigerator to set for 5 minutes.
  • Add the Malibu and Cream of Coconut to a cocktail shaker filled with ice and vigorously shake well to combine (about 15-20 seconds).
  • Retrieve the serving glass from the refrigerator and pour the Malibu mixture into the glass.
  • Drip the grenadine into the center. Just let gravity take over and slowly drip in enough grenadine to cover the bottom 1/4-1/2” of the glass or until desired layer of red is achieved.
  • Using a bar spoon or teaspoon, SLOWLY and gently pour the Sprite onto the back of the spoon, aiming at the inside edge of the glass.
  • Skewer the maraschino cherries and place on top of the glass.
  • Serve and enjoy!

Notes

Other lemon-lime soda, coconut rum can be used in place of Sprite and Malibu Rum.
Use clear glasses so you can see the layers.
If you can’t find Pop Rocks, blue sanding sugar works well too.
If making several of these or a big batch, it’s easier and cheaper to use blue sanding sugar.
