Strawberry Tiramisu
This easy Strawberry Tiramisu is a delicious and elegant dessert. Layers of ladyfingers are soaked in a sweet strawberry sauce and layered with a creamy mascarpone filling. Fresh strawberries add a burst of juicy sweetness and vibrant color. This no bake dessert is a fun twist on the Italian dessert. Very refreshing and perfect for spring dinners and summer gatherings.

- 2 lbs fresh strawberries hulled (900 g)
- 4 tablespoons granulated sugar 50 g
- 1 tablespoon fresh or bottled lemon juice 15 ml
- 1 tablespoon rose water optional (15 ml)
- 2 tablespoons water if needed (30 ml)
- 1 17 oz package Ladyfinger cookies
- 2 cups whipping cream 480 ml
- 2 cups Mascarpone cheese
- ΒΌ cup powdered sugar 30 g
Prepare the Strawberries:
Reserve about 12 strawberries for garnish.
Puree the remaining strawberries with granulated sugar, lemon juice, and rose water (if using).
If the puree is too thick to be easily absorbed by the cookies, add up to 2 tablespoons (30 ml) of cold water to achieve a smoothie-like texture.
Prepare the Mascarpone Cream:
In a large mixing bowl, add the mascarpone cheese. Soften it by mixing in a little whipping cream.
Add the remaining whipping cream and powdered sugar.
Whip the mixture until stiff peaks form. Divide the mascarpone cream into two equal portions.
Assemble the Tiramisu:
Dip the ladyfinger cookies into the strawberry puree and place a single layer in a 9β x 8β ceramic dish.
Spread half of the mascarpone cream over the layer of cookies.
Repeat with another layer of soaked ladyfinger cookies.
Spread the remaining mascarpone cream over the second layer of cookies.
Garnish with the reserved strawberries, sliced or halved as desired.
Chill the tiramisu in the refrigerator for at least 4 hours before serving.
Use any leftover strawberry puree as a topping when serving.
- Make the strawberry puree and mascarpone cream ahead of time. Then just assemble the tiramisu when ready.
- Cold heavy cream is best for making the cream filling.
- Store tiramisu in an airtight container in the refrigerator.
