Strawberry Goat Cheese Bruschetta

- 1 4 oz package goat cheese
- 1 cup Arugula
- 1 carton fresh strawberries washed and destemmed
- 1/4 cup orange juice
- 1 French bread baguette
- 2 tablespoons honey
Slice the French baguette into 1/4" slices.
Place baguette slices on cookie sheet and bake at 305° for about 6 -8 minutes.
Destem and wash strawberries.
Slice strawberries (about 1/4")
Add orange juice strawberry slices in a small saucepan over medium heat. Cook 2 -3 minutes.
Place toasted baguette slices on serving dish.
Spread 1 teaspoon goat cheese on each baguette slice.
Add one Arugula leaf to slice.
Layer two slices of strawberry slice mixture on each leaf.
Drizzle with honey and serve.
- Always use fresh berries for best results.
- The baguette slices should be golden brown and slightly crispy so that they hold the cheese and strawberries.
- Use a quality goat cheese.
- While you can prepare the ingredients ahead of time, they should be prepared just prior to serving.
- Store leftover strawberries in an airtight container in the refrigerator.
