Strawberry Goat Cheese Bruschetta

A delicious bruschetta recipe with strawberries and cheese.

Equipment

Ingredients

  • 1 4 oz package goat cheese
  • 1 cup Arugula
  • 1 carton fresh strawberries washed and destemmed
  • 1/4 cup orange juice
  • 1 French bread baguette
  • 2 tablespoons honey

Instructions

  • Slice the French baguette into 1/4" slices.
  • Place baguette slices on cookie sheet and bake at 305° for about 6 -8 minutes.
  • Destem and wash strawberries.
  • Slice strawberries (about 1/4")
  • Add orange juice strawberry slices in a small saucepan over medium heat. Cook 2 -3 minutes.
  • Place toasted baguette slices on serving dish.
  • Spread 1 teaspoon goat cheese on each baguette slice.
  • Add one Arugula leaf to slice.
  • Layer two slices of strawberry slice mixture on each leaf.
  • Drizzle with honey and serve.

Notes

  • Always use fresh berries for best results. 
  • The baguette slices should be golden brown and slightly crispy so that they hold the cheese and strawberries.
  • Use a quality goat cheese. 
  • While you can prepare the ingredients ahead of time, they should be prepared just prior to serving. 
  • Store leftover strawberries in an airtight container in the refrigerator.
