Fresh, colorful, and easy to make, this Strawberry Almond Salad is the perfect spring and summer side dish. Sweet strawberries, crunchy almonds, and a simple dressing make every bite delicious.

Equipment

Ingredients

  • Salad
  • 4 cups mixed greens
  • 1 ripe avocado sliced thin
  • 1 cup strawberries rinsed, tops removed, and sliced thin
  • ¼ cup toasted sliced almonds
  • 2 ounces feta cheese crumbled
  • Salt & pepper to taste

Honey Mustard Vinaigrette Dressing

  • ¼ cup Dijon mustard
  • ¼ cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon minced garlic
  • Salt & pepper to taste

Instructions

  • Layer 2 cups of the mixed greens in the bottoms of two salad bowls.
  • Arrange half of the avocado, strawberries, almonds, and feta in each bowl of lettuce.
  • Season with salt & pepper to taste.
  • Prepare honey mustard dressing in a mixing bowl and whisk until combined.
  • Serve salad with dressing

Notes

Add chicken, salmon, or shrimp for more protein if desired.
You can use any lettuce base that you prefer. Try chopped romaine if preferred.
If you don’t like almonds, consider using toasted or candied pecans or walnuts instead.
Add your favorite chopped fresh veggies for more crunch and bulk if you like.
