Simple Mango Cupcakes

These easy Mango cupcakes are wonderful as an easy spring dessert idea. Made with a boxed cake mix and fresh mangoes then topped with buttercream frosting and fresh mango. Such a beautiful and easy spring or summer dessert idea.

Ingredients

  • 1 box white cake mix vanilla or yellow cake mix ok
  • 1/2 cup mango smoothie or pureed mango juice
  • 2 eggs
  • 2 cups sour cream
  • mango pieces optional for topping

Instructions

  • Preheat oven to 350 degrees.
  • Prepare a cupcake pan with baking liners
  • In a large mixing bowl, ombine cake mix with juice, eggs and sour cream..
  • Once mixed thoroughly, pour into prepared cupcake pan
  • Bake 16-19 minutes until toothpick comes out clean.
  • Prepare buttercream frosting.
  • Frost with buttercream frosting and add a slice of mango to each cupcake.

Notes

Store leftovers in an airtight container in the refrigerator.
For best results use cupcake liners.
You can add a little bit of flaked coconut to the tops of the cupcakes if desired.
