Simple Mango Cupcakes

- 1 box white cake mix vanilla or yellow cake mix ok
- 1/2 cup mango smoothie or pureed mango juice
- 2 eggs
- 2 cups sour cream
- mango pieces optional for topping
Preheat oven to 350 degrees.
Prepare a cupcake pan with baking liners
In a large mixing bowl, ombine cake mix with juice, eggs and sour cream..
Once mixed thoroughly, pour into prepared cupcake pan
Bake 16-19 minutes until toothpick comes out clean.
Prepare buttercream frosting.
Frost with buttercream frosting and add a slice of mango to each cupcake.
Store leftovers in an airtight container in the refrigerator.
For best results use cupcake liners.
You can add a little bit of flaked coconut to the tops of the cupcakes if desired.
