Simple Baking Mix Apple Muffins
These soft, fluffy apple cinnamon muffins are made with applesauce and a baking mix and ready in under 30 minutes. A cozy fall favorite the whole family will love!

- 2 cups baking mix such as Bisquick or Jiffy
- 2 tablespoon butter
- 1/3 cup applesauce
- ½ cup brown sugar
- 1/4 cup granulated sugar
- ½ cup milk
- 1 egg
- 1 medium apple peeled and diced
- 1 teaspoon cinnamon
Preheat oven to 425 degrees f.
In a bowl, mix egg and sugars and butter together to combine.
Add baking mix, applesauce, cinnamon, apples, and milk until blended.
Put into a greased muffin tin or muffin tin lined with baking cups.
Bake at 425 degrees for 5 minutes, then lower the temperature to 350° F and bake another 20 minutes.
Let cool a few minutes before serving.
They are so light and fluffy. This recipe makes about 12 standard muffins.
If you like, you can sprinkle a little extra cinnamon and sugar on top of the muffins before baking.
Store in an airtight container.
