Simple Baking Mix Apple Muffins

These soft, fluffy apple cinnamon muffins are made with applesauce and a baking mix and ready in under 30 minutes. A cozy fall favorite the whole family will love!

Ingredients

  • 2 cups baking mix such as Bisquick or Jiffy
  • 2 tablespoon butter
  • 1/3 cup applesauce
  • ½ cup brown sugar
  • 1/4 cup granulated sugar
  • ½ cup milk
  • 1 egg
  • 1 medium apple peeled and diced
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 425 degrees f.
  • In a bowl, mix egg and sugars and butter together to combine.
  • Add baking mix, applesauce, cinnamon, apples, and milk until blended.
  • Put into a greased muffin tin or muffin tin lined with baking cups.
  • Bake at 425 degrees for 5 minutes, then lower the temperature to 350° F and bake another 20 minutes.
  • Let cool a few minutes before serving.

Notes

They are so light and fluffy. This recipe makes about 12 standard muffins.
If you like, you can sprinkle a little extra cinnamon and sugar on top of the muffins before baking.
Store in an airtight container.
