Ingredients

  • 4 pork loin center rib or sirloin chops bone-in or boneless
  • 1 cup plain breadcrumbs you can also use panko if you wish
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with foil and place a wire rack on top. Spray the rack with non-stick cooking spray.
  • In a large ziplock, mix breadcrumbs, salt, pepper, paprika, garlic powder, and dried oregano. Shake to combine.
  • Lightly brush each pork chop with olive oil. Place in the bag, seal, and shake until fully coated. Press the coating firmly onto the chops to ensure they stay coated.
  • Place the coated pork chops on the prepared wire rack. Bake for 20 minutes, flipping halfway through, until the internal temperature reaches 145°F.
  • For extra crunch and golden color, broil the chops for 1–2 minutes at the end of baking.
  • Let the pork chops rest for 5 minutes before serving. Garnish with fresh parsley.
