- 4 pork loin center rib or sirloin chops bone-in or boneless
- 1 cup plain breadcrumbs you can also use panko if you wish
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- 2 tablespoons olive oil
- Fresh parsley chopped (for garnish)
Preheat the oven to 425°F. Line a baking sheet with foil and place a wire rack on top. Spray the rack with non-stick cooking spray.
In a large ziplock, mix breadcrumbs, salt, pepper, paprika, garlic powder, and dried oregano. Shake to combine.
Lightly brush each pork chop with olive oil. Place in the bag, seal, and shake until fully coated. Press the coating firmly onto the chops to ensure they stay coated.
Place the coated pork chops on the prepared wire rack. Bake for 20 minutes, flipping halfway through, until the internal temperature reaches 145°F.
For extra crunch and golden color, broil the chops for 1–2 minutes at the end of baking.
Let the pork chops rest for 5 minutes before serving. Garnish with fresh parsley.
