Red White and Blue Popsicles

Ingredients

  • 1 1/4 cup frozen strawberries
  • 3 tbsp. honey divided
  • 2 tbsp. lemon juice divided
  • 3/4 cup vanilla Greek yogurt
  • 1 cup frozen blueberries
  • 6 tbsp. water divided
  • 8 popsicle sticks

Instructions

  • To your blender, add strawberries, 1 tbsp. honey, 1 tbsp. lemon juice, and 2 tbsp. water. Blend.
  • Add about 2 tbsp. of the strawberry mixture to each popsicle space.
  • Move to the freezer to chill for 45 minutes.
  • Next, add 2 tbsp. water and 1 tbsp. honey to the Greek yogurt and whisk well to combine.
  • Add 2 tbsp. of the yogurt mixture to each popsicle space.
  • Add your popsicle sticks during this step, placing them in the middle the best you can.
  • Move to the freezer for another 45 minutes.
  • Finally, add the blueberries, 1 tbsp. honey, 1 tbsp. lemon juice, and 2 tbsp. water to your blender. Blend until smooth.
  • Fill the popsicle spaces the remainder of the way with the blueberry mixture and give the popsicle sticks a final straighten.
  • Freeze the popsicles for 4 hours.

Notes

Run the mold under warm water for a few seconds to release the popsicles easily.
