- 1 package refrigerated pie crust
- ¼ cup blueberry pie filling
- ⅓ cup sugar
- 1 egg
Thaw pie crust per package directions.
Preheat oven to 425°
Roll out pie crust on waxed paper or lightly floured surface.
Cut out pie crust using a 3" glass or cookie cutter.
Place half of the cut circles onto a parchment lined baking sheet.
Spoon 1 teaspoon pie filling onto dough on baking sheet.
Top each circle with second cut out.
Seal the outside of each pie by pressing a fork around the edge.
Turn over each pie and seal again.
Brush each pie with a light coat of egg wash.
Sprinkle each pie with about ½ teaspoon sugar.
Bake 12-14 minutes.
Cool before serving
