Pumpkin Spice Cupcakes with Cream Cheese Frosting

These Pumpkin Spice Cupcakes with Cream Cheese Frosting are made with a cake mix and an easy three-ingredient frosting. They are a delicious and simple fall dessert.

  • cupcake pan
  • star piping tip
  • piping bag

Ingredients

Pumpkin Cupcakes

  • 1 box Spice Cake Mix<
  • 1 15 oz can Pumpkin
  • 1/4 cup water
  • 1 egg
  • 1/2 Teaspoon vanilla

Cream Cheese Frosting

  • 1 8 oz. package Cream cheese
  • 1/2 cup butter softened
  • 3 cups powdered sugar

Instructions

  • Preheat oven to 350 °.
  • In a large mixing bowl, blend all ingredients..
  • Pour into prepared baking cups. Fill about 2/3 full.
  • Bake 20-24 minutes or until a toothpick comes out clean.
  • Let cupcakes cool completely on a wire rack or similar.

Prepare Cream Cheese Frosting

  • In a large bowl, cream together butter and cream cheese on slow speed in mixer.
  • Gradually add powdered sugar and beat on high until peaks form. Frost cupcakes.
  • Frost with cream cheese frosting using piping tip and piping bag.

Notes

Store leftovers in an airtight container in the refrigerator.
