Pineapple Lemonade

This easy Pineapple Lemonade is sweet, tangy, and incredibly refreshing. Made with pineapple juice, fresh lemon juice, and simple ingredients, it's the perfect summer drink recipe for barbecues, pool parties, picnics, and family gatherings.

Ingredients

  • 4 cup fresh lemon juice
  • 1 1/2 cups fresh pineapple chunks
  • 3/4 cup pineapple juice
  • 4 cups water divided
  • 1/2 cup granulated sugar

Instructions

  • To a medium saucepan, add 1 cup of water and 1/2 cup granulated sugar.
  • Heat over medium-high heat, stirring occasionally, until steamy and sugar is dissolved.
  • Allow the syrup to cool.
  • To a blender, add pineapple chunks and 2 cups water. Blend well.
  • Strain the blended pineapple through a mesh sieve.
  • Rinse the blender, and add the strained pineapple back to the blender. Add the lemon juice, pineapple juice, and last cup of water.
  • Blend to combine.
  • Serve over ice, and garnish with fresh lemons or pineapple, if desired.

Notes

  • Fresh vs. canned pineapple: Fresh is ideal, but canned pineapple in 100% juice works great as a budget-friendly swap. Avoid pineapple packed in syrup as it will make the lemonade overly sweet and muddy the flavor.
  • Make it ahead: The lemonade base (without ice) keeps well in the refrigerator for up to 3 days. Give it a good stir before serving as it can settle slightly.
  • Adjusting sweetness: Taste before you serve. If it's too tart, add a splash more simple syrup. If it is too sweet, add a little extra lemon juice balances it right out.
