- 1 cup unsalted butter, softened (1 cup = 2 sticks)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 ¼ cups all-purpose flour
- ½ cup pecans finely chopped
- Powdered sugar for coating
Preheat oven to 400° F .
Line baking sheet with parchment paper.
In a large bowl, beat together butter, ½ cup powdered sugar and vanilla until well combined.
Mix in salt and flour until well combined. Add nuts.
Shape dough into 1 inch balls and place on prepared baking sheets
Bake for 10-12 minutes or until lightly golden brown
Remove from oven and cool slightly, about 2-3 minutes, on a wire rack.
Add remaining powdered sugar to a medium bowl.Roll cookies in powdered sugar and then roll them again. Place on wire rack to cool completely.
Store in an airtight container
Cookies can be stored in a covered container at room temperature for up to 5 days.
