- 1 box yellow cake mix
- 1/4 cup butter softened
- 1/2 cup brown sugar packed
- 1 cup peanut butter
- 1 tablespoon vegetable oil
- 1 egg
In a large bowl, cream butter, brown sugar, peanut butter, oil and egg.
Add cake mix and blend.
Roll dough into 1 inch balls onto a parchment-lined baking sheet.
Flatten cookies with a fork, using a criss cross pattern.
Bake at 350°F for 12-14 minutes and let cool for 3 -4 minutes.
Store cookies in an airtight container at room temperature for up to 4 days. Adding a slice of bread or apple to the container helps keep them soft.
To freeze baked cookies: cool completely, then freeze in a single layer until solid before transferring to a freezer bag or airtight container. Freeze for up to 3 months. Thaw at room temperature for about 30 minutes before serving. To freeze the dough: roll into balls, freeze on a baking sheet until solid, then transfer to a freezer bag for up to 3 months.
Bake straight from frozen, adding 1-2 extra minutes to the bake time.
